  • 1 lb ground beef about 450g, 85% lean preferred
  • 2 medium zucchinis diced
  • 1 cup uncooked long-grain rice or substitute brown rice
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 can diced tomatoes 14 oz, drained
  • 1 tsp dried oregano
  • 0.5 tsp ground cumin optional
  • salt and black pepper to taste
  • fresh parsley chopped, for garnish
  • crumbled feta cheese optional
  • lemon wedges optional, for serving

Method
 

  1. Cook the rice according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until softened.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Increase heat to medium-high, add ground beef. Break it up and season with salt, pepper, oregano, and cumin. Cook for 5-7 minutes until browned.
  5. Add diced zucchini and cook for 3-4 minutes until tender-crisp.
  6. Stir in drained diced tomatoes, reduce heat to medium-low, and simmer for 5 minutes until mixture thickens.
  7. To serve: divide cooked rice among bowls. Top with beef-zucchini mixture. Garnish with parsley, feta, and lemon if using.

Notes

Make it your own by using ground turkey instead of beef, or eggplant instead of zucchini. Serve in wraps for a different take!
