Ingredients
  

Soup Base
  • 1 whole chicken or bone-in chicken pieces
  • 2 onions chopped
  • 3 carrots sliced
  • 3 celery stalks chopped
  • 2 cloves garlic minced
  • 1 bay leaf
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme or 1/2 tsp dried
Optional Add-ins
  • 1 cup egg noodles or rice
  • 1 tsp lemon juice for brightness (optional)

Equipment

  • Large Pot or Kettle

Method
 

  1. Place the chicken in a large pot and cover with water. Bring to a boil over medium-high heat.
  2. Skim off any foam that rises to the top to keep the broth clear.
  3. Add chopped onions, carrots, celery, garlic, bay leaf, salt, pepper, thyme, and parsley.
  4. Reduce heat to low and simmer uncovered for 90 minutes, until chicken is tender.
  5. Remove the chicken from the pot, shred it, and discard bones. Return shredded chicken to the pot.
  6. If desired, add egg noodles or rice and simmer until cooked through.
  7. Adjust seasoning to taste. Add lemon juice if using. Serve hot.
