- Place the chicken in a large pot and cover with water. Bring to a boil over medium-high heat.
- Skim off any foam that rises to the top to keep the broth clear.
- Add chopped onions, carrots, celery, garlic, bay leaf, salt, pepper, thyme, and parsley.
- Reduce heat to low and simmer uncovered for 90 minutes, until chicken is tender.
- Remove the chicken from the pot, shred it, and discard bones. Return shredded chicken to the pot.
- If desired, add egg noodles or rice and simmer until cooked through.
- Adjust seasoning to taste. Add lemon juice if using. Serve hot.
