  • 4 boneless, skinless chicken thighs or breasts
  • 1.5 lbs baby Yukon potatoes cut in half
  • 4 cloves garlic minced
  • 0.5 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • 0.75 cup chicken broth
  • 0.25 cup heavy cream optional, for creaminess
  • 2 tbsp olive oil
  • chopped parsley for garnish

Method
 

  1. Wash and halve your potatoes. Mince the garlic. Season the chicken with salt, pepper, and a pinch of garlic powder.
  2. Add the potatoes to the bottom of the Crockpot. Place the seasoned chicken on top.
  3. In a small bowl, whisk together the chicken broth, minced garlic, Parmesan, garlic powder, onion powder, and Italian seasoning. Pour over the chicken and potatoes.
  4. Set your Crockpot to LOW for 7–8 hours or HIGH for 4 hours.
  5. In the last 30 minutes of cooking, stir in the heavy cream for a creamy finish (optional).
  6. Garnish with chopped parsley and serve hot with extra Parmesan if desired.

Notes

Parboil the potatoes for 5 minutes if you prefer them very soft. Add green beans or carrots halfway through for a full one-pot meal. This recipe is freezer-friendly and great for leftovers!
