- Wash and halve your potatoes. Mince the garlic. Season the chicken with salt, pepper, and a pinch of garlic powder.
- Add the potatoes to the bottom of the Crockpot. Place the seasoned chicken on top.
- In a small bowl, whisk together the chicken broth, minced garlic, Parmesan, garlic powder, onion powder, and Italian seasoning. Pour over the chicken and potatoes.
- Set your Crockpot to LOW for 7–8 hours or HIGH for 4 hours.
- In the last 30 minutes of cooking, stir in the heavy cream for a creamy finish (optional).
- Garnish with chopped parsley and serve hot with extra Parmesan if desired.
Notes
Parboil the potatoes for 5 minutes if you prefer them very soft. Add green beans or carrots halfway through for a full one-pot meal. This recipe is freezer-friendly and great for leftovers!
