  • 1 1/2 pounds chicken tenders fresh, not frozen
  • 1 cup grated parmesan cheese
  • 1 cup breadcrumbs panko or Italian seasoned
  • 2 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 2 large eggs
  • 2 tbsp milk
  • 2 tbsp olive oil
  • 2 tbsp melted butter
  • fresh parsley optional, for garnish

Method
 

  1. Whisk together eggs and milk in a shallow bowl. In another bowl, mix breadcrumbs, grated parmesan, garlic powder, salt, and pepper.
  2. Dip chicken tenders into the egg mixture, then press into the breadcrumb mixture until fully coated. Set aside.
  3. Heat olive oil and melted butter in a skillet over medium heat.
  4. Place chicken tenders in the skillet in a single layer. Cook for 3–4 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
  5. Transfer to a plate lined with paper towels. Garnish with extra parmesan and parsley. Serve hot with your favorite dipping sauce.

Notes

Want a lighter version? Bake at 425°F for 15–20 minutes or air fry at 400°F for 10–12 minutes. Fresh garlic can be added for more punch!
