  • 4 chicken breasts or thighs
  • 3 cups Yukon Gold or baby red potatoes sliced evenly
  • 4 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 3 tbsp olive oil
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 2 tbsp parsley chopped, optional

Method
 

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, mix olive oil, garlic, Parmesan, salt, pepper, Italian seasoning, and paprika.
  3. Coat chicken and sliced potatoes in the mixture until well coated.
  4. Arrange on baking sheet without overlapping for even roasting.
  5. Roast for 25–30 minutes, flipping halfway, until chicken is cooked through and potatoes are golden.
  6. Sprinkle with extra Parmesan and broil for 2–3 minutes if desired. Garnish with parsley before serving.

Notes

Try adding broccoli or bell peppers for more veggies. Marinate chicken and potatoes ahead for deeper flavor. Don’t crowd the pan for best results.
