  • 2 chicken breasts boneless, skinless
  • 1 lb baby potatoes halved
  • 8 oz fresh green beans trimmed
Seasoning
  • 3 tbsp olive oil divided
  • 4 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice freshly squeezed

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss halved baby potatoes with 1 tablespoon olive oil, 1 clove minced garlic, thyme, rosemary, salt, and pepper.
  3. Spread seasoned potatoes onto a large baking sheet.
  4. Rub chicken breasts with 1 tablespoon olive oil, 2 cloves garlic, paprika, salt, pepper, and lemon juice. Place them beside the potatoes on the baking sheet.
  5. Bake for 20 minutes.
  6. Meanwhile, toss green beans with 1 tablespoon olive oil and remaining garlic.
  7. Remove baking sheet, add green beans, and bake another 15–20 minutes, until chicken is cooked through and vegetables are tender and golden.

Notes

You can easily swap in chicken thighs, broccoli, or sweet potatoes depending on what you have. This recipe is flexible and perfect for meal prep.
