  • 4 slices thick bread (sourdough or country loaf)
  • 2 tbsp butter softened
  • 2 cloves garlic minced
  • 1/2 tsp dried Italian herbs
  • 1 cup shredded mozzarella
  • 2 slices cheddar cheese

  • thinly sliced tomato

Method
 

  1. Mix the softened butter, minced garlic, and Italian herbs in a small bowl to make a garlic spread.
  2. Spread the garlic-herb butter on one side of each bread slice.
  3. Preheat a skillet over medium heat.
  4. Place two slices of bread, buttered side down, onto the skillet. Add half the mozzarella and one slice of cheddar to each.
  5. Add any optional fillings like spinach or tomato. Then top with the remaining cheeses and the final slices of bread, buttered side up.
  6. Cook for 3–4 minutes per side, until golden brown and cheese is fully melted. Press gently with a spatula.
  7. Remove from skillet, rest for 1 minute, slice, and serve immediately.

Notes

Try using a lid in the last minute of cooking to help the cheese melt perfectly. Leftovers can be reheated in foil at 350°F for 5–7 minutes.
