Method
- Mix the softened butter, minced garlic, and Italian herbs in a small bowl to make a garlic spread.
- Spread the garlic-herb butter on one side of each bread slice.
- Preheat a skillet over medium heat.
- Place two slices of bread, buttered side down, onto the skillet. Add half the mozzarella and one slice of cheddar to each.
- Add any optional fillings like spinach or tomato. Then top with the remaining cheeses and the final slices of bread, buttered side up.
- Cook for 3–4 minutes per side, until golden brown and cheese is fully melted. Press gently with a spatula.
- Remove from skillet, rest for 1 minute, slice, and serve immediately.
Notes
Try using a lid in the last minute of cooking to help the cheese melt perfectly. Leftovers can be reheated in foil at 350°F for 5–7 minutes.
