Ingredients
  

Main Ingredients
  • 2 medium cucumbers peeled and sliced
  • 4 large lemons juiced
  • 1/2 cup sugar adjust to taste
  • 4 cups cold water
  • ice cubes for serving
  • fresh mint leaves optional garnish
Optional Variations
  • 1 splash sparkling water for fizz
  • pinch fresh ginger optional for extra zing

Method
 

  1. Peel and slice cucumbers. Set aside a few slices for garnish if desired.
  2. Juice the lemons and set aside the juice.
  3. In a blender, combine cucumber slices, 2 cups cold water, and half the sugar. Blend until smooth.
  4. Pour the mixture through a fine sieve to remove pulp and achieve a smooth texture.
  5. Stir in remaining 2 cups of cold water and the fresh lemon juice. Adjust sweetness to taste.
  6. Refrigerate for at least 30 minutes to chill.
  7. Serve over ice cubes, garnish with cucumber slices or fresh mint, and optionally add sparkling water for fizz.

Notes

This lemonade can be customized with honey or agave syrup instead of sugar, and herbs like basil or rosemary can be added for extra flavor. Best enjoyed fresh but can be stored in the fridge for up to 48 hours.
