- In a large soup pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add diced onion, bell pepper, and garlic. Sauté for 3–4 minutes until vegetables soften and garlic is fragrant.
- Stir in taco seasoning and oregano. Mix well to coat the beef and vegetables.
- Pour in beef broth, diced tomatoes, black beans, and corn. Stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes, stirring occasionally.
- Optional: Transfer to slow cooker and cook on low for 4–6 hours or high for about 2 hours.
- Taste and adjust seasoning if needed. Serve hot with your choice of toppings.
