  • 1 lb ground beef
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2-3 cloves garlic minced
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 can diced tomatoes 14.5 oz, with juices
  • 1 can diced tomatoes with green chilies 10 oz, optional
  • 4 cups beef broth
  • 1 tbsp taco seasoning or homemade mix
  • 1/2 tsp oregano

Method
 

  1. In a large soup pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Add diced onion, bell pepper, and garlic. Sauté for 3–4 minutes until vegetables soften and garlic is fragrant.
  3. Stir in taco seasoning and oregano. Mix well to coat the beef and vegetables.
  4. Pour in beef broth, diced tomatoes, black beans, and corn. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes, stirring occasionally.
  6. Optional: Transfer to slow cooker and cook on low for 4–6 hours or high for about 2 hours.
  7. Taste and adjust seasoning if needed. Serve hot with your choice of toppings.
