Main Ingredients
  • 1 lb breakfast sausage spicy or mild
  • 10 large eggs
  • 2 cups shredded cheese cheddar, mozzarella, or a mix
  • 1 cup milk
  • 4 cups cubed bread day-old bread works best
  • 1 small onion diced
  • salt & pepper to taste

Method
 

  1. Preheat your oven to 350°F (180°C). Grease a 9x13 inch casserole dish.
  2. In a skillet over medium heat, brown the sausage. Drain any excess grease and set aside.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  4. Layer cubed bread, cooked sausage, diced onion, and any optional vegetables into the casserole dish.
  5. Pour the egg mixture evenly over the casserole, making sure all bread is soaked. Top with shredded cheese.
  6. Bake for 35–40 minutes until golden brown and fully set. Let rest 5 minutes before slicing and serving.

Notes

To make ahead, assemble the casserole the night before, cover, and refrigerate. In the morning, bake as directed. This dish is freezer-friendly too – bake first, then cool and freeze for up to 2 months.
