Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup sugar
Wet Ingredients
  • 2 eggs room temperature
  • 1/2 cup butter or vegetable oil melted
  • 3/4 cup milk or buttermilk
  • 1 tsp vanilla extract
Decoration
  • 12 mini pretzels for antlers
  • 12 red candies for noses
  • 24 candy eyes two per muffin
  • chocolate or vanilla frosting for topping

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with holiday paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and baking soda.
  3. In a separate bowl, mix eggs, melted butter (or oil), milk, and vanilla extract.
  4. Combine the wet and dry ingredients until smooth.
  5. Fill muffin cups about 2/3 full and bake for 18–20 minutes, or until a toothpick comes out clean.
  6. Let muffins cool completely before decorating.
  7. Spread frosting on each muffin. Add two pretzels for antlers, candy eyes, and a red candy nose to create the reindeer face.

Notes

Get creative with decorations – try peppermint frosting, edible glitter, or crushed candy canes. Make ahead and freeze undecorated muffins for quick assembly during the holidays.
