Method
 

  1. Preheat oven to 375°F (190°C). Grease a mini muffin tin or use a silicone popper tray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Spoon the batter into the prepared muffin tin, filling each about 2/3 full. Add optional toppings like chocolate chips or blueberries.
  6. Bake for 10–12 minutes or until golden and cooked through.
  7. Let cool slightly and serve warm with powdered sugar, syrup, or fruit.
