- Preheat oven to 375°F (190°C). Grease a mini muffin tin or use a silicone popper tray.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each about 2/3 full. Add optional toppings like chocolate chips or blueberries.
- Bake for 10–12 minutes or until golden and cooked through.
- Let cool slightly and serve warm with powdered sugar, syrup, or fruit.
