Ingredients

  • 2 lbs baby potatoes halved if large
  • 14 oz andouille sausage sliced
  • 1 onion chopped
  • 2 cups fresh green beans trimmed
  • 1 packet onion soup mix
  • 4 tbsp butter cut into chunks
  • 3 cloves garlic minced
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Method
 

  1. Rinse and halve baby potatoes if needed. Chop the onion, trim the green beans, slice the sausage, and mince the garlic.
  2. Layer the baby potatoes in the bottom of the crockpot. Add onions and green beans on top. Place sausage slices over the vegetables.
  3. Sprinkle onion soup mix, salt, pepper, garlic powder, and onion powder evenly over the top. Dot with butter chunks.
  4. Add minced garlic and gently stir the top layer to distribute seasoning slightly.
  5. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours until potatoes are tender.
  6. Let sit covered for 10 minutes after cooking. Stir gently and serve hot with bread or rice.

Notes

Let the dish rest before serving so the sauce thickens. For extra flavor, use smoked andouille sausage and fresh garlic. Leftovers reheat beautifully and make a great next-day lunch!
