  • 1.5–2 pounds smoked sausage sliced into coins
  • 1.5 pounds baby potatoes halved
  • 12 oz fresh green beans trimmed
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 0.5 tsp black pepper
  • salt to taste

Method
 

  1. Wash and halve the baby potatoes. Trim the green beans, slice the sausage and onion, and mince the garlic.
  2. Layer the potatoes on the bottom of the crockpot. Add green beans on top, followed by sausage and onion slices.
  3. Drizzle olive oil over everything. Sprinkle garlic, paprika, thyme, black pepper, and salt evenly on top.
  4. Pour chicken broth around the edges (not directly on top).
  5. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until potatoes are fork-tender and sausage is cooked through.
  6. Gently stir and serve warm. Enjoy with crusty bread or a fresh salad.

Notes

For more flavor, try adding bell peppers, Parmesan cheese, or a splash of balsamic vinegar at the end. Use frozen green beans if needed—add them in the last hour of cooking.
