- Wash and halve the baby potatoes. Trim the green beans, slice the sausage and onion, and mince the garlic.
- Layer the potatoes on the bottom of the crockpot. Add green beans on top, followed by sausage and onion slices.
- Drizzle olive oil over everything. Sprinkle garlic, paprika, thyme, black pepper, and salt evenly on top.
- Pour chicken broth around the edges (not directly on top).
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until potatoes are fork-tender and sausage is cooked through.
- Gently stir and serve warm. Enjoy with crusty bread or a fresh salad.
Notes
For more flavor, try adding bell peppers, Parmesan cheese, or a splash of balsamic vinegar at the end. Use frozen green beans if needed—add them in the last hour of cooking.
