Method
- Slice the sausage into thick rounds. Wash and cut the potatoes into even chunks.
- Place the potatoes in the bottom of your slow cooker, followed by sliced onions and minced garlic.
- Add sausage on top of the vegetables. Drizzle with olive oil or butter.
- Sprinkle salt, pepper, paprika, and optional herbs over the mixture. Pour in the chicken broth.
- Cover and cook on low for 5 hours or until potatoes are tender and flavors have melded.
- Gently stir before serving. Serve hot as is or with bread or salad.
Notes
Feel free to customize with bell peppers, carrots, or even a splash of cream. Leftovers taste even better the next day!
