- Sort and rinse the red beans thoroughly, removing any debris or damaged beans. Place the cleaned beans in the slow cooker.
- Place the smoked turkey leg on top of the beans in the crockpot.
- Add chopped celery, green bell pepper, onion, and minced garlic to the slow cooker.
- Add the butter, chicken bouillon, smoked paprika, onion powder, garlic powder, and black pepper.
- Pour the chicken broth over all the ingredients, ensuring everything is submerged.
- Cover and cook on low for about 8 hours, or until the beans are tender and creamy.
- Remove the turkey leg, discard the bones, shred the meat, and return the meat to the pot. Stir well.
- Serve the red beans over freshly cooked white rice and enjoy.
Notes
For thicker beans, mash a small portion of the beans and stir them back into the pot. You can also substitute smoked sausage for the turkey leg for a more traditional Louisiana flavor.
