Ingredients
  

Beans
  • 1 lb small red beans sorted and rinsed
Protein
  • 1 smoked turkey leg
Vegetables
  • 2 ribs celery chopped
  • 1 green bell pepper chopped
  • 1 onion chopped
  • 6 cloves garlic minced
Seasonings
  • 1 block butter
  • 2 tbsp chicken bouillon
  • 1 tbsp smoked paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp black pepper
Liquids
  • 8 cups chicken broth

Method
 

  1. Sort and rinse the red beans thoroughly, removing any debris or damaged beans. Place the cleaned beans in the slow cooker.
  2. Place the smoked turkey leg on top of the beans in the crockpot.
  3. Add chopped celery, green bell pepper, onion, and minced garlic to the slow cooker.
  4. Add the butter, chicken bouillon, smoked paprika, onion powder, garlic powder, and black pepper.
  5. Pour the chicken broth over all the ingredients, ensuring everything is submerged.
  6. Cover and cook on low for about 8 hours, or until the beans are tender and creamy.
  7. Remove the turkey leg, discard the bones, shred the meat, and return the meat to the pot. Stir well.
  8. Serve the red beans over freshly cooked white rice and enjoy.

Notes

For thicker beans, mash a small portion of the beans and stir them back into the pot. You can also substitute smoked sausage for the turkey leg for a more traditional Louisiana flavor.
