Ingredients
  

Main Ingredients
  • 1.5–2 pounds beef steak sirloin or flank steak, sliced against the grain
  • 2–3 bell peppers mixed colors preferred, sliced
  • 1 large onion thinly sliced
Sauce
  • 3/4 cup soy sauce
  • 1/4 cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger optional
  • salt and pepper to taste
Thickening Slurry
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Method
 

  1. Slice your beef steak thinly against the grain and place it in the bottom of the crock pot.
  2. In a bowl, mix soy sauce, beef broth, brown sugar, Worcestershire sauce, and garlic (and ginger, if using).
  3. Pour the sauce mixture over the beef in the crock pot.
  4. Layer bell peppers and onions on top of the beef and sauce.
  5. Season with salt and pepper to taste. Stir gently to combine without overmixing.
  6. Cover and cook on low for 6–8 hours or high for 3–4 hours, until beef is tender.
  7. 30 minutes before serving, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) to thicken the sauce.
  8. Serve hot over rice, noodles, or mashed potatoes.

Notes

For firmer vegetables, add bell peppers halfway through cooking. You can also freeze leftovers for up to 2 months.
