Method
- Slice your beef steak thinly against the grain and place it in the bottom of the crock pot.
- In a bowl, mix soy sauce, beef broth, brown sugar, Worcestershire sauce, and garlic (and ginger, if using).
- Pour the sauce mixture over the beef in the crock pot.
- Layer bell peppers and onions on top of the beef and sauce.
- Season with salt and pepper to taste. Stir gently to combine without overmixing.
- Cover and cook on low for 6–8 hours or high for 3–4 hours, until beef is tender.
- 30 minutes before serving, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) to thicken the sauce.
- Serve hot over rice, noodles, or mashed potatoes.
Notes
For firmer vegetables, add bell peppers halfway through cooking. You can also freeze leftovers for up to 2 months.
