  • 1.5 pounds beef sirloin or stew meat cut into bite-sized pieces
  • 1.5 pounds yellow potatoes or baby potatoes washed, halved if large
  • 1 stick garlic butter or 1/2 cup (113g)
  • 3 cloves garlic minced
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 0.5 tsp paprika optional
  • 0.25 tsp onion powder optional
  • 0.25 tsp chili flakes optional, for heat
  • 1 tsp rosemary or thyme fresh or dried

Method
 

  1. Cut beef into bite-sized pieces. Season with salt, pepper, garlic powder, and paprika.
  2. Wash and prep potatoes. Leave skin on. Cut large ones in half or quarters.
  3. Melt garlic butter in a saucepan with minced garlic until aromatic.
  4. Layer potatoes at the bottom of the crockpot. Add beef on top. Pour garlic butter mixture evenly over everything.
  5. Sprinkle herbs over the top. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. Serve warm with extra herbs or dinner rolls for dipping. Enjoy!

Notes

Optional: For more flavor, sear beef before adding to crockpot. Add fresh parsley before serving for color and taste.
