Ingredients
  

Meatloaf Mixture
  • 2 lbs ground beef
  • 1 packet Lipton Onion Soup Mix
  • 2 eggs beaten
  • 1/2 cup milk
  • 1 cup Ritz crackers crushed
  • 1 onion diced or thinly sliced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
Topping
  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • fresh parsley optional, for garnish

Method
 

  1. In a large bowl, combine ground beef, Lipton onion soup mix, beaten eggs, milk, and crushed Ritz crackers. Mix until fully incorporated.
  2. Add in diced onion, Worcestershire sauce, salt, pepper, and garlic powder. Stir until evenly distributed.
  3. Shape the mixture into a loaf and place into the crockpot.
  4. In a small bowl, mix ketchup and brown sugar. Spread over the top of the meatloaf.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours.
  6. Let rest for a few minutes before slicing. Garnish with fresh parsley if desired and serve warm.

Notes

Double the onion if you love bold French onion flavor. Use leftover crockpot juices to make an easy gravy. Reheat gently to preserve moisture.
