Ingredients
  

Beef and Broth
  • 3-4 lbs beef roast (chuck or rump)
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • salt to taste
Sandwich Assembly
  • 6 hoagie rolls or French rolls
  • provolone or Swiss cheese slices

Method
 

  1. Season your roast generously with salt and pepper.
  2. Place sliced onions and minced garlic in the bottom of the slow cooker. Add the seasoned roast on top.
  3. Pour beef broth over the roast. Drizzle Worcestershire sauce, then add thyme and black pepper.
  4. Cover and cook on low for 8–10 hours, or high for 5–6 hours, until the beef is fork-tender.
  5. Shred the beef in the slow cooker to soak up the juices.
  6. Assemble sandwiches with shredded beef and cheese on hoagie rolls. Let the cheese melt.
  7. Serve with a bowl of jus (cooking liquid) for dipping.

Notes

For extra flavor, sear the roast before slow cooking. Try adding mushrooms, spicy cheese, or garlic butter for variations. Store leftovers in airtight containers in the fridge for up to 4 days or freeze for 3 months.
