Ingredients
  

Meat Mixture
  • 1 1/2 pounds ground beef
  • 1 packet taco seasoning
  • 1 can black beans drained
  • 1 can corn drained
  • 1 can Rotel tomatoes undrained
  • 8 ounces cream cheese cubed
Salad Assembly
  • 1 bag Nacho Cheese Doritos lightly crushed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes fresh

Method
 

  1. Brown the ground beef in a skillet over medium heat. Drain excess grease and stir in taco seasoning.
  2. Transfer the seasoned beef to the slow cooker. Add black beans, corn, Rotel tomatoes, and cream cheese. Stir gently to combine.
  3. Cover and cook on LOW for 3–4 hours or HIGH for 2 hours, until heated through and creamy.
  4. Before serving, stir the meat mixture well. In a large bowl, combine shredded lettuce, cheddar cheese, sour cream, and diced tomatoes.
  5. Gently fold in crushed Doritos just before serving to maintain their crunch. Serve immediately and enjoy.

Notes

For best results, add the Doritos right before serving to prevent sogginess. The meat mixture can be prepared ahead of time and stored separately for easy reheating.
