Ingredients
  

  • 1 1/2 pounds beef stew meat
  • 1 pound baby potatoes
  • 4 carrots sliced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 packet brown gravy mix
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • salt to taste
  • black pepper to taste
  • 2 tablespoons butter
  • fresh parsley for garnish

Method
 

  1. Wash and chop the vegetables. Cut larger potatoes in half if needed. Season the beef stew meat with salt, pepper, and paprika.
  2. Place the potatoes, carrots, onions, and garlic into the bottom of the slow cooker. Add the seasoned beef on top.
  3. In a small bowl, whisk together the beef broth, brown gravy mix, and Italian seasoning. Pour the mixture over the ingredients in the slow cooker.
  4. Dot the top with butter. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until the beef is fork-tender and the vegetables are soft.
  5. Garnish with fresh parsley and serve warm with crusty bread, dinner rolls, or your favorite side dish.

Notes

For a thicker gravy, mix 1 tablespoon cornstarch with cold water and stir it into the slow cooker during the last 20 minutes of cooking. Fresh vegetables hold their texture best, but frozen vegetables can also be used.
