Ingredients

Main Ingredients
  • 2 pounds thinly sliced beef such as sirloin or ribeye
  • 4 cups diced potatoes fresh or frozen
  • 1 large onion sliced
  • 1 green bell pepper sliced
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp salt and pepper to taste
  • 2 cups shredded cheese cheddar, provolone, or your favorite
  • 1 tbsp olive oil

Equipment

  • Crockpot
  • Skillet
  • Cutting Board

Method

  1. Prepare potatoes by dicing fresh ones or using frozen for ease.
  2. Sear the beef in a skillet with olive oil until browned (optional but flavorful).
  3. Layer potatoes, onions, peppers, and garlic in the crockpot. Add seared beef on top.
  4. Pour in beef broth and Worcestershire sauce. Season with salt and pepper.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours, until potatoes are tender.
  6. In the final 15 minutes, sprinkle cheese over the casserole and allow it to melt before serving.

Notes

Customize your casserole by swapping beef for ground meat or sausage, adding jalapeños for spice, or stirring in cream soup for richness. Perfect for meal prep and leftovers!
