Crockpot Cajun Parmesan Potatoes

  • 2 lbs baby red or yellow potatoes washed, halved or quartered
  • 2 Tbsp olive oil
  • 1 Tbsp Cajun seasoning or to taste
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • salt & pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1 Tbsp fresh parsley chopped, for garnish
Optional for full meal
  • 2 boneless, skinless chicken breasts or thighs optional
  • 1 cup chicken broth or cream optional, for sauce version
  • 1 tsp minced garlic optional, for flavor boost

Method
 

  1. Lightly spray or brush oil into the slow cooker insert to prevent sticking.
  2. In a large bowl, toss the potato pieces with olive oil, Cajun seasoning, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Transfer the potato mixture into the slow cooker.
  4. If including chicken, place the pieces on top of the potatoes and pour broth around the edges (not directly on top).
  5. Cover and cook on Low for 5–6 hours or High for 2.5–3 hours, until potatoes are tender (and chicken, if added, is fully cooked).
  6. About 15 minutes before serving, sprinkle grated Parmesan cheese over the top. Cover again and let it melt slightly.
  7. Stir gently, garnish with fresh parsley, and serve warm.

Notes

For extra crispiness, transfer the finished potatoes to a baking sheet and broil for 2–3 minutes. Adjust Cajun spice level based on your preference. Skip chicken for a vegetarian version.
