Method
- Season the beef chunks with salt and black pepper.
- Optional: Heat olive oil in a skillet over medium‑high heat and sear the beef on all sides until browned; transfer to the slow cooker.
- Add the sliced bell peppers, onion, and minced garlic to the slow cooker.
- In a bowl, whisk together the beef broth, paprika, dried oregano, and tomato paste, then pour over the beef and veggies.
- Cover and cook on low for 6–8 hours (or high for 4–5 hours) until the beef is tender and peppers are soft.
- Give everything a gentle stir before serving.
Notes
For a spicier version, add crushed red pepper flakes or sliced jalapeños. Serve over rice, mashed potatoes, or egg noodles for maximum comfort.
