Ingredients
  

Main Ingredients
  • 2 lb beef chuck roast or stew meat cut into 1½–2 inch chunks
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
Vegetables & Aromatics
  • 3 bell peppers mixed colors, sliced
  • 1 large onion sliced
  • 3 cloves garlic minced
Sauce & Seasonings
  • 1 cup beef broth
  • 1 tbsp paprika
  • 1 tsp dried oregano
  • 1 tbsp tomato paste

Equipment

  • Slow Cooker / Crockpot
  • Skillet (optional for searing)

Method
 

  1. Season the beef chunks with salt and black pepper.
  2. Optional: Heat olive oil in a skillet over medium‑high heat and sear the beef on all sides until browned; transfer to the slow cooker.
  3. Add the sliced bell peppers, onion, and minced garlic to the slow cooker.
  4. In a bowl, whisk together the beef broth, paprika, dried oregano, and tomato paste, then pour over the beef and veggies.
  5. Cover and cook on low for 6–8 hours (or high for 4–5 hours) until the beef is tender and peppers are soft.
  6. Give everything a gentle stir before serving.

Notes

For a spicier version, add crushed red pepper flakes or sliced jalapeños. Serve over rice, mashed potatoes, or egg noodles for maximum comfort.
