Method
- Wash and scrub the sweet potatoes thoroughly. Pat them completely dry.
- Brush each sweet potato lightly with olive oil or butter, if using. Sprinkle with salt and cinnamon.
- Place the sweet potatoes into the Crockpot. No need to add water.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until fork tender.
- Slice open, fluff with a fork, and top with your desired toppings. Serve warm.
Notes
Use similarly sized sweet potatoes for even cooking. Leftovers can be mashed and turned into soup or stored in the fridge for up to 5 days. Wrap in foil for easier clean-up.
