  • 4 russet potatoes medium-sized, scrubbed and dried
  • 1 tbsp olive oil or butter for rubbing on skins
  • 1 tsp sea salt to taste

Method
 

  1. Wash and dry your potatoes thoroughly.
  2. Rub each potato with olive oil or butter and sprinkle with salt.
  3. Wrap each potato in foil for softer skin (optional), or leave unwrapped for crisper skin.
  4. Place potatoes in the slow cooker in a single layer. Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  5. Check for doneness by piercing with a fork. Potatoes should be tender and fluffy.

Notes

You can make these ahead and store them for up to 5 days. Reheat in the microwave or oven, or freeze for longer storage. Great for meal prep!
