Method
- Season the chuck roast generously with salt and pepper (optional).
- Place the roast in the Crockpot.
- Sprinkle the dry onion soup mix evenly over the roast.
- Add the carrots and potatoes around the roast.
- Pour the beef broth over the ingredients.
- Cover and cook on low for 8 hours, or until the roast is tender and falls apart easily.
Notes
Leftovers can be shredded for sandwiches or wraps the next day. Feel free to swap in other root vegetables like parsnips or sweet potatoes.
