  • 1 pound ground beef lean but flavorful
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 pound shredded cheddar cheese divided
  • 1 bag frozen sliced potatoes
  • 1 small onion diced
  • 1 green bell pepper chopped
  • 2 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper to taste
  • sliced jalapeños optional
  • ranch seasoning optional

Method
 

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Season with garlic powder, paprika, salt, and pepper.
  2. Spray your slow cooker with non-stick spray. Spread the frozen sliced potatoes evenly on the bottom.
  3. Add the seasoned ground beef on top of the potatoes. Then add the diced onion and chopped green bell pepper.
  4. Stir in both cans of soup: cream of mushroom and cream of chicken.
  5. Sprinkle half of the shredded cheddar cheese over the top.
  6. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  7. Before serving, sprinkle the remaining cheddar cheese over the top and let it melt.

Notes

Customize your casserole with ranch seasoning or sliced jalapeños for extra flavor. It also reheats well and can be frozen for easy future meals.
