- Cut the sweet potatoes into thin, even sticks for maximum crispiness.
- Soak the fries in cold water for 30 minutes. Drain and dry thoroughly.
- Toss fries in cornstarch until evenly coated.
- Add olive oil (if using), paprika, garlic powder, salt, and pepper. Toss again.
- Line a baking sheet with parchment paper or use a wire rack. Spread fries out evenly with space between them.
- Bake at 425°F (218°C) for 25–30 minutes, flipping halfway through, until golden and crisp.
Notes
For oil-free fries, skip the olive oil and slightly increase the cornstarch. Bake on a wire rack to maximize crispiness. Try adding different seasonings like Cajun spice, cinnamon sugar, or garlic parmesan for variety.
