Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Drain and rinse the chickpeas. Dry them thoroughly using paper towels. This step is crucial for crispiness.
  3. Toss the dried chickpeas with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Spread chickpeas in a single layer on the baking sheet, making sure they’re not crowded.
  5. Roast for 35–40 minutes, shaking the pan halfway through, until golden and crispy.
  6. Optional: In the last 10 minutes of baking, sprinkle with Parmesan for extra crisp and flavor.
