Ingredients
  

Chicken & Marinade
  • 2 large chicken breasts boneless, skinless, about 1½ lbs
  • 1 cup buttermilk or milk + splash of vinegar
  • 1 tsp hot sauce optional
Breading
  • 1.5 cups all-purpose flour
  • 0.25 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp salt
  • 0.5 tsp black pepper
Assembly
  • 4 brioche or hamburger buns buttered & toasted
  • lettuce, tomato slices, pickles for topping
  • your favorite sauce
  • vegetable oil for frying (~½-inch depth)

Method
 

  1. Flatten chicken breasts to ½-inch thickness using a meat mallet or rolling pin.
  2. Marinate chicken in buttermilk and hot sauce for at least 30 minutes (or overnight).
  3. Mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper in a bowl.
  4. Dredge marinated chicken in flour mixture, pressing to coat. For extra crunch, dip again in marinade and flour.
  5. Heat oil to ~350°F. Fry chicken 3–4 minutes per side until golden brown and cooked through (165°F internal temp).
  6. Butter and toast buns. Assemble sandwich with sauce, lettuce, tomato, pickles, and fried chicken.

Notes

Swap toppings for variety—try avocado, cheddar, or hot honey. For leftovers, store chicken and buns separately and reheat in oven for best texture.
