Ingredients
  

For the Potatoes
  • 4 large russet potatoes scrubbed and pierced
  • 2 tbsp olive oil for coating potatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • salt and pepper to taste
  • 2 tbsp butter melted, for brushing
For the Steak Bites
  • 1.5 lbs steak sirloin or ribeye, cut into bite-sized pieces
  • 1 tbsp olive oil for searing steak
  • salt and pepper to taste
Optional Toppings
  • sour cream
  • shredded cheese
  • chives or green onions chopped, for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Scrub and dry the potatoes, pierce with a fork. Rub with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper. Place skin-side up on a baking sheet and bake for 45–55 minutes until crispy outside and fluffy inside.
  2. While potatoes bake, heat a cast iron skillet over medium-high heat with olive oil. Add steak bites and sear 3–4 minutes per side until browned and juicy. Season with salt and pepper. Let rest off heat.
  3. Once potatoes are baked, slice open and fluff insides with a fork. Brush with melted butter.
  4. Top each potato with steak bites and desired toppings like sour cream, cheese, and chives. Serve warm and enjoy!

Notes

Use sweet potatoes for a twist, or add sautéed veggies for extra nutrition. Don’t skip resting the steak—it keeps the bites juicy.
