- Preheat oven to 425°F (220°C). Scrub and dry the potatoes, pierce with a fork. Rub with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper. Place skin-side up on a baking sheet and bake for 45–55 minutes until crispy outside and fluffy inside.
- While potatoes bake, heat a cast iron skillet over medium-high heat with olive oil. Add steak bites and sear 3–4 minutes per side until browned and juicy. Season with salt and pepper. Let rest off heat.
- Once potatoes are baked, slice open and fluff insides with a fork. Brush with melted butter.
- Top each potato with steak bites and desired toppings like sour cream, cheese, and chives. Serve warm and enjoy!

Use sweet potatoes for a twist, or add sautéed veggies for extra nutrition. Don’t skip resting the steak—it keeps the bites juicy.
