- In a bowl, whisk together eggs, heavy cream, milk, vanilla, and cinnamon until smooth.
- Dip each slice of brioche into the custard, allowing it to soak thoroughly.
- Melt butter in a skillet over medium heat. Cook each slice for 2–3 minutes per side, or until golden brown.
- Transfer to a plate. Sprinkle the tops generously with granulated sugar.
- Use a kitchen torch to caramelize the sugar until bubbly and crisp. Alternatively, place under broiler for 1–2 minutes.
- Serve warm with fresh berries or fruit compote, if desired.
Notes
For best results, use slightly stale bread. To save time, soak the bread in custard overnight and cook in the morning. Don’t skip the caramelized sugar topping—it’s what makes this dish truly special!
