Method
 

  1. In a bowl, whisk together eggs, heavy cream, milk, vanilla, and cinnamon until smooth.
  2. Dip each slice of brioche into the custard, allowing it to soak thoroughly.
  3. Melt butter in a skillet over medium heat. Cook each slice for 2–3 minutes per side, or until golden brown.
  4. Transfer to a plate. Sprinkle the tops generously with granulated sugar.
  5. Use a kitchen torch to caramelize the sugar until bubbly and crisp. Alternatively, place under broiler for 1–2 minutes.
  6. Serve warm with fresh berries or fruit compote, if desired.
