  • 1 lb ground turkey
  • 1 cup sliced mushrooms
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp olive oil or butter
  • to taste salt and pepper

  • egg noodles or rice, mashed potatoes, or cauliflower mash

Method
 

  1. Heat olive oil in a skillet or Dutch oven over medium heat. Add ground turkey and cook until browned.
  2. Add chopped onions and cook until translucent. Stir in garlic and sliced mushrooms. Cook until mushrooms are golden.
  3. Pour in the chicken broth and bring to a simmer. Reduce heat and let it cook for a few minutes to reduce slightly.
  4. Stir in sour cream (or Greek yogurt). Season with salt and pepper to taste.
  5. Simmer on low for 5–10 minutes until the sauce thickens slightly. Serve hot over noodles or your favorite base.

Notes

Swap sour cream with Greek yogurt for a lighter option. Sauté mushrooms well to boost flavor. This recipe is perfect for meal prep – just reheat gently!
