Ingredients
  

Pasta
  • 12 oz pasta (penne or fettuccine)
Sauce
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 small onion finely chopped
  • 14 oz crushed tomatoes 1 can
  • 0.5 cup heavy cream
  • 0.25 cup Parmesan cheese grated
  • 0.25 tsp red pepper flakes optional
  • salt and pepper to taste
  • fresh basil optional, for garnish

Method
 

  1. Cook pasta in salted boiling water according to package instructions until just before al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion until soft, about 3 minutes. Add garlic and cook for 30 seconds.
  3. Pour in crushed tomatoes and let simmer for 5–7 minutes until slightly thickened.
  4. Stir in heavy cream and Parmesan. Add red pepper flakes if using. Season with salt and pepper.
  5. Add cooked pasta to the sauce. Toss until well coated. Simmer for 2 minutes to let the sauce cling.
  6. Serve hot. Garnish with fresh basil and more Parmesan if desired.

Notes

Want a protein boost? Add grilled chicken or shrimp. Leftover veggies? Toss them in! Want it even creamier? Stir in a tablespoon of cream cheese. For a vegan version, use coconut cream and vegan Parmesan.
