Ingredients
  

Stuffed Mushrooms Base
  • 20 white button mushrooms stems removed and saved
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/4 cup onion chopped
  • 1/4 cup cream cheese softened
  • 1/3 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 2 tbsp fresh parsley chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup breadcrumbs optional, for crunch

Method
 

  1. Preheat your oven to 375°F (190°C). Gently clean the mushrooms with a damp paper towel and remove the stems. Chop the stems finely.
  2. Heat olive oil in a pan. Add garlic, onion, and chopped mushroom stems. Sauté until soft and golden. Let cool slightly.
  3. In a bowl, mix the sautéed veggies with cream cheese, mozzarella, Parmesan, parsley, salt, and pepper until creamy.
  4. Fill each mushroom cap with the mixture. Sprinkle breadcrumbs on top if using.
  5. Place on a parchment-lined baking sheet and bake for 18–20 minutes, or until golden and bubbly. Serve warm.

Notes

Try mixing in cooked bacon, spinach, or sun-dried tomatoes for variety. You can also prep these up to 24 hours in advance and bake before serving.
