  • 1 cup shredded cooked chicken
  • 4 oz cream cheese softened
  • 2 tbsp parmesan cheese grated
  • 1 clove garlic minced
  • 1 tsp Italian herbs
Chicken
  • 4 chicken breasts boneless and skinless
  • 1 tbsp olive oil for brushing
  • 2 tbsp parmesan cheese for topping

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine shredded chicken, cream cheese, garlic, parmesan, and Italian herbs. Mix until well combined.
  3. Carefully butterfly each chicken breast and lay flat.
  4. Stuff each chicken breast with the creamy filling. Fold and secure with toothpicks.
  5. Brush with olive oil and sprinkle parmesan on top.
  6. Place in a baking dish and bake for 25 minutes or until chicken is golden and cooked through.
  7. Let rest for 5 minutes before serving. Remove toothpicks and enjoy!
