  • 12 oz pasta (fettuccine or linguine preferred)
  • 1 lb raw shrimp peeled and deveined
  • 3 tbsp butter or olive oil
  • 4 cloves garlic finely minced
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • salt and black pepper to taste

  • red pepper flakes to taste
  • lemon zest optional, for brightness
  • fresh parsley for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Drain and set aside.
  2. In a large skillet, heat butter or olive oil over medium heat. Add shrimp and minced garlic. Cook for 2–3 minutes per side, or until the shrimp turns pink. Remove shrimp and set aside.
  3. Reduce the heat. Pour in the heavy cream and stir gently. Add Parmesan cheese and whisk until the sauce is smooth and creamy.
  4. Return the shrimp to the skillet, then add the cooked pasta. Toss everything together until the pasta is well coated with the sauce.
  5. Season with salt, black pepper, and optional red pepper flakes or lemon zest. Garnish with chopped parsley and serve hot.

Notes

To reheat, add a splash of milk or cream to loosen the sauce. For added flavor, stir in spinach, peas, or cherry tomatoes. Use freshly grated Parmesan for the best texture and taste.
