  • 200 g pasta fettuccine or spaghetti recommended
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 3/4 cup heavy cream
  • 1/2 cup freshly grated parmesan
  • to taste salt and pepper
  • 1 tbsp fresh parsley chopped, optional

Method
 

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve a small amount of pasta water before draining.
  2. In a large pan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Do not let it brown.
  3. Reduce heat to low and pour in the heavy cream. Stir until well combined with the garlic butter mixture.
  4. Stir in the freshly grated Parmesan and continue stirring until the cheese melts and the sauce becomes creamy.
  5. Add the cooked pasta to the sauce and toss to coat. Use a splash of reserved pasta water to adjust consistency if needed.
  6. Season with salt and pepper to taste. Garnish with chopped parsley and serve immediately.

Notes

Use freshly grated Parmesan for the best flavor and texture. Avoid browning the garlic to keep the flavor balanced. Add mushrooms, spinach, or red pepper flakes for easy variations.
