  • 1 kg potatoes peeled and cubed
  • 1 large onion diced
  • 2 celery stalks diced
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 2 tbsp butter or oil for sautéing
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 250 g smoked Cajun sausage sliced
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper adjust to taste
  • 1 tsp oregano
  • 0.5 tsp thyme
  • salt & pepper to taste

  • croutons optional, for texture

Method
 

  1. In a large pot over medium heat, melt butter and sauté onion, celery, and red bell pepper until softened.
  2. Add garlic and cook for another minute.
  3. Stir in cubed potatoes and seasonings (paprika, cayenne, oregano, thyme).
  4. Pour in broth, bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  5. Optional: Use immersion blender to purée half the soup for a creamy texture.
  6. Stir in cream and sliced sausage. Simmer for another 5–10 minutes to blend flavors.
  7. Adjust salt and pepper to taste. Serve hot with toppings of choice.

Notes
