- In a large pot over medium heat, melt butter and sauté onion, celery, and red bell pepper until softened.
- Add garlic and cook for another minute.
- Stir in cubed potatoes and seasonings (paprika, cayenne, oregano, thyme).
- Pour in broth, bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Optional: Use immersion blender to purée half the soup for a creamy texture.
- Stir in cream and sliced sausage. Simmer for another 5–10 minutes to blend flavors.
- Adjust salt and pepper to taste. Serve hot with toppings of choice.
