Method
 

  1. Preheat the oven to 350 °F (175 °C). Grease a standard loaf pan.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In a separate bowl, beat eggs with melted butter and milk until smooth.
  4. Gently fold wet ingredients into dry until just combined. Don’t overmix.
  5. Stir in cranberries and optional orange zest.
  6. Pour batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
