- Preheat the oven to 350 °F (175 °C). Grease a standard loaf pan.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, beat eggs with melted butter and milk until smooth.
- Gently fold wet ingredients into dry until just combined. Don’t overmix.
- Stir in cranberries and optional orange zest.
- Pour batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
