Main Ingredients
  • 1 large loaf bread round or oval works best
  • 2 cups cooked chicken shredded or chopped
  • 1 cup shredded cheese cheddar, mozzarella, or a mix
  • 1/2 cup cream cheese or soft cheese spread
  • 1/4 cup sour cream or plain yogurt optional
  • 1-2 cloves garlic minced
  • 2 tbsp butter or olive oil
  • salt and pepper to taste
  • fresh herbs parsley, chives, or thyme, optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cut off the top third of the bread loaf. Hollow out the inside to make a shell. Save the insides for later use.
  3. In a bowl, mix cooked chicken, cream cheese, sour cream (if using), minced garlic, butter or oil, herbs, salt and pepper. Fold in any optional veggies if using.
  4. Spoon the filling into the hollowed-out loaf and top generously with shredded cheese.
  5. Place on a baking sheet, cover loosely with foil and bake for 15 minutes. Remove foil and bake another 10–12 minutes until bubbly and golden.
  6. Let rest for 5 minutes before slicing. Serve warm.

Notes

Use leftover rotisserie chicken to save time. Add chili flakes or BBQ sauce for flavor twists. Cube the leftover bread center for homemade croutons.
