Ingredients

For the Steak
  • 4 cube steaks
  • 2 cups all-purpose flour divided
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt plus more to taste
  • 1 tsp black pepper
  • 2 eggs beaten
  • 1/2 cup milk
  • vegetable oil for frying
For the Gravy
  • 2 tbsp butter
  • 2 tbsp flour
  • 1.5 cups milk warm
  • 1/2 tsp black pepper to taste

Equipment

  • Skillet
  • Shallow bowls
  • Whisk
  • Tongs

Method

  1. Season cube steaks with salt and pepper. Set aside.
  2. In one shallow bowl, mix 1 1/2 cups flour with paprika, garlic powder, salt, and pepper. In another bowl, whisk eggs and milk together.
  3. Dredge steaks in flour, then egg wash, then again in flour for a thick coating.
  4. Heat oil in a skillet over medium heat. Fry steaks 3–4 minutes per side until golden brown and crispy. Drain on paper towels.
  5. For the gravy: melt butter in the same skillet, whisk in 2 tbsp flour, and cook for 1 minute. Slowly add 1.5 cups milk while whisking until thickened. Season with black pepper.
  6. Serve steaks hot with creamy gravy spooned generously on top.

Notes

Pair with mashed potatoes, biscuits, or even Frijoles Charros for a rich, smoky side. For extra flavor, add a pinch of cayenne to the flour mix.
