Method
- Season cube steaks with salt and pepper. Set aside.
- In one shallow bowl, mix 1 1/2 cups flour with paprika, garlic powder, salt, and pepper. In another bowl, whisk eggs and milk together.
- Dredge steaks in flour, then egg wash, then again in flour for a thick coating.
- Heat oil in a skillet over medium heat. Fry steaks 3–4 minutes per side until golden brown and crispy. Drain on paper towels.
- For the gravy: melt butter in the same skillet, whisk in 2 tbsp flour, and cook for 1 minute. Slowly add 1.5 cups milk while whisking until thickened. Season with black pepper.
- Serve steaks hot with creamy gravy spooned generously on top.
Notes
Pair with mashed potatoes, biscuits, or even Frijoles Charros for a rich, smoky side. For extra flavor, add a pinch of cayenne to the flour mix.
