Ingredients
  

Chowder Base
  • 4 cups potatoes diced
  • 1 cup onion chopped
  • 2 cups corn fresh or frozen
  • 2 cups chicken broth
  • 2 cups chicken cooked and shredded
  • 2 cloves garlic minced
Finishing Ingredients
  • 1 cup heavy cream
  • 1 cup cheddar cheese shredded
  • 4 slices bacon cooked and crumbled
  • salt to taste
  • pepper to taste

Method
 

  1. Chop the potatoes and onions into even-sized pieces.
  2. Add potatoes, onions, corn, garlic, chicken, and chicken broth to the slow cooker. Stir gently.
  3. Cook on low for 6–7 hours or high for 3–4 hours until the potatoes are tender.
  4. About 30 minutes before serving, stir in the heavy cream and shredded cheese until melted and smooth.
  5. Season with salt and pepper to taste, then top with crumbled bacon before serving.

Notes

If the chowder is too thick, add a bit more broth. For a thicker texture, mash some of the potatoes directly in the slow cooker. You can also customize this recipe with different proteins or make it vegetarian by skipping the meat.
