- Chop the potatoes and onions into even-sized pieces.
- Add potatoes, onions, corn, garlic, chicken, and chicken broth to the slow cooker. Stir gently.
- Cook on low for 6–7 hours or high for 3–4 hours until the potatoes are tender.
- About 30 minutes before serving, stir in the heavy cream and shredded cheese until melted and smooth.
- Season with salt and pepper to taste, then top with crumbled bacon before serving.
Notes
If the chowder is too thick, add a bit more broth. For a thicker texture, mash some of the potatoes directly in the slow cooker. You can also customize this recipe with different proteins or make it vegetarian by skipping the meat.
