- Heat olive oil in a large skillet over medium heat. Add chicken, season with garlic powder, salt, and pepper, and cook until golden brown and fully cooked through.
- Add in mushrooms and sauté until softened, then stir in spinach until wilted.
- Reduce heat and stir in the cream cheese until melted and the mixture is creamy.
- Preheat your oven to 375°F (190°C). Transfer the creamy mixture into a greased baking dish.
- Sprinkle the top with grated parmesan and shredded mozzarella cheese.
- Bake for 20–25 minutes, or until the cheese is bubbly and golden.
- Serve hot, optionally over cauliflower rice for a full meal.
Notes
Use rotisserie chicken to save time. Add crushed pork rinds for extra crunch. Spice it up with jalapeños or red pepper flakes. Even picky eaters will love it with a little cheddar mixed in.
