  • 2 tbsp olive oil
  • 1 lb boneless chicken cut into bite-sized pieces
  • 1 lb smoked sausage sliced
  • 3 bell peppers mixed colors, sliced
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 tsp paprika
  • 1 tsp dried oregano
  • salt and pepper to taste
  • fresh parsley for garnish

Method
 

  1. Prepare all ingredients: slice the sausage, cut the chicken, and chop the vegetables.
  2. Heat olive oil in a large skillet or Dutch oven over medium heat. Add the chicken and cook until golden brown.
  3. Add the sausage, peppers, and onion. Cook for about 5 minutes until vegetables are tender and sausage starts to crisp.
  4. Stir in garlic, paprika, oregano, salt, and pepper. Cook for another minute to combine flavors.
  5. Add rice and stir to coat with the mixture. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid is absorbed.
  7. Fluff rice with a fork, garnish with fresh parsley, and serve hot.

Notes

Customize the dish with your favorite vegetables or spices. For a healthier twist, use brown rice or add greens like spinach toward the end.
