Chicken Potato Cake! Easy Recipe – The Comfort Meal I Keep Coming Back To

Chicken Potato Cake! Easy Recipe

This comforting dish combines leftover chicken, mashed potatoes and a crispy crust — perfect for busy school nights when you want warm, simple comfort.
Course: Main Dish, Snack

Ingredients

Main Mixture
  • cooked shredded chicken (leftover or fresh)
  • boiled potatoes, mashed
  • salt
  • pepper
Optional Add‑Ins
  • breadcrumbs for coating for extra‑crispy crust
  • oil or cooking spray for pan‐frying or air‑frying

Equipment

  • Skillet

Method

  1. Shred the cooked chicken and mash the boiled potatoes.
  2. Mix the chicken and mashed potatoes together, season with salt and pepper (and any herbs or spices you like).
  3. Chill the mixture slightly (for easier shaping) then form into patties.
  4. Lightly coat each patty with breadcrumbs (optional) for a crispy crust.
  5. Heat oil in a skillet (or pre‑heat your air fryer). Cook the patties until golden brown on each side and heated through.
  6. Serve the cakes warm, with a salad, yogurt sauce, or as a snack with dip.

Notes

This recipe is super flexible: you can add cheese, herbs, change the coating, or use the air‑fryer version for fewer calories. Works great with leftovers, and you can freeze shaped patties for later.
