Pasta
  • 12 oz pasta (penne or rotini)
Chicken & Vegetables
  • 2 large chicken breasts sliced thin
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 small onion thinly sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning store-bought or homemade
Sauce
  • 0.5 cup chicken broth
  • 0.75 cup heavy cream
  • 1 cup shredded cheese cheddar or Mexican blend
  • fresh cilantro optional garnish
  • lime optional garnish

Method
 

  1. Bring a large pot of salted water to a boil. Cook the pasta until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and fajita seasoning. Cook until browned and nearly cooked through.
  3. Add the sliced bell peppers and onion to the skillet. Sauté until softened and slightly charred.
  4. Stir in the garlic and cook for about one minute until fragrant.
  5. Pour in chicken broth and heavy cream. Let the sauce simmer for a few minutes until slightly thickened.
  6. Stir in the shredded cheese and mix until melted into the sauce.
  7. Add the cooked pasta into the skillet and toss everything together until well coated.
  8. Garnish with fresh cilantro and a squeeze of lime, if desired. Serve warm.

Notes

This recipe is easy to adapt. Try using shrimp or steak instead of chicken, or add veggies like zucchini or mushrooms. For more heat, toss in jalapeños or chipotle!
