  • 20 pieces large pasta shells
  • 1 pound ground beef
  • 1 packet taco seasoning or homemade blend
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup cheddar cheese shredded
  • 1 cup Mexican-style blend cheese shredded
  • 1/4 cup cream cheese optional, for creaminess
  • 1 cup taco sauce or tomato sauce
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Cook pasta shells in boiling salted water until al dente. Drain and set aside.
  3. In a large skillet, cook ground beef over medium heat. Add diced onion and minced garlic. Cook until beef is no longer pink and onions are softened.
  4. Stir in taco seasoning and a splash of water. Let it simmer until thickened.
  5. Mix in shredded cheeses (reserving some for topping). Stir in cream cheese if using, until melted and combined.
  6. Fill each cooked shell with the taco beef mixture.
  7. Spread a thin layer of taco sauce in the bottom of a baking dish. Arrange stuffed shells on top.
  8. Top with remaining shredded cheese and bake for 15–20 minutes, until bubbly and golden.
  9. Garnish with your favorite toppings and serve warm.

Notes

These shells can be prepped ahead and even frozen. Try customizing with beans, veggies, or different meats to suit your taste.
